Greek Yogurt Tzatziki

Tzatziki is one of my favorite condiments ever! I come from a Greek family so we tend to use this a lot! When it is made with Greek yogurt, it not only adds a light and fresh flavor to veggies, gyros, etc., but it also adds extra protein! Win-Win! 

 
1 medium cucumber, peeled
1 cup plain yogurt
4 tbsp olive oil
1 tbsp chopped fresh dill
1 tbsp chopped fresh garlic
1 tbsp red wine vinegar
Using a knife, remove the seeds from the cucumber and cut into small dice. Do not chop in a food processor or the cucumber will become mushy. Mix cucumber with the rest of the ingredients.
